When I was no longer legally obligated to make sure minor children were well cared for and fed on a daily basis, I stopped cooking unless I really wanted to. (which is rarely because peanut butter toast is my favorite) And lets be honest, my kids learned how to cook pretty young out of self defense.

      Oh dear.

On the bright side 🙃, someone knows the awesomeness of peanut butter on right out of the toaster bread. That is the stuff right there!!!

Peanut butter toast is MY favorite! I ate it every day for breakfast when I was a kid and would now if my daughter wasn’t allergic! I love good gourmet food as much as the next person, but not if I have to cook it!

Is she allergic to just peanuts or most other nuts as well?

          All nuts.

It’s all good, once you find out, you just live with it. It doesn’t really affect her daily life. She just packs a lunch and eats her own food—we are raising a discriminating eater though-with her dad cooking and all, she would rather eat at home than anywhere else!

What brand ramyeon did you use?

It’s not about the brand but about the way you cook it, so says my husband. (So this was a cheap Nissin Top Ramen.) We use two boiling stages, one for the noodles (and you dump that water) and then one after you get the noodles in the bowel. You don’t want to overcook the noodles, so you cook them just al dente in the first boiling stage and then they get cooked more in the bowl with new boiling water with the rest of the veggies and whatever left over meat I found in the fridge (which was carmelized pork tonight—Jackpot!). Also, I put the sauce packet directly in the bowl as well and my kids have to mix it all together before they eat it. I forgot to put an egg in the first boiling stage to poach it, but you could do that too. And add kimchi! Always add kimchi.

Carmelized pork! I’m so jelly right now. Yum!!!

I think you were the beanie I had discussions with about pho right? Your husband used to work in a pho restaurant or had some friends who used to work/run one or something. Is he a chef by trade?

No, he never worked there, just ate there and thought the pho was phenomenal, so went and talked to the chef and ended up touring the kitchen and learning how to make it. He does make the best pho in town—it’s famous and people we’ve never met are vying to get invites to eat it! We’re habong a pho party tomorrow night actually! No one misses when they’re invited for pho 🍲!!!

I’m going to try ramyun KangDan style soon. I’ll let you know how it goes!

Ha, my dad used to do this whenever my mom was sick or away. He didn’t put spinach in it, though.

Gotta get some nutrition in that somewhere! I’m not that useless, pretty close, but not entirely!
