We see this noodle dish throughout Put Your Head on My Shoulder and it now evolves wonderfully together with the development of our DoraMo Couple’s relationship.
MoMo loves her “Luosifen” which directly translates as “snail thread noodles.” It is notoriously known for giving off a foul smell mostly due to the fermented bamboo and fermented green beans in the soup.
The broth is made of approximately equal portion of pork leg bones and river snails that is reduced for hours.
In addition to the fermented bamboo and green beans, the broth is made with aromatics like cardamom, fennel seed, dried orange peel, cloves, white pepper, bay leaf, licorice root, and star anise, as well as the usual flavor enhancement of garlic, ginger, scallion, and chilli.
When the broth is ready, one could add all the fixin’s such as fried tofu, peanuts, shredded wooden ear mushrooms, braised quail egg, chicken feet or wings and assorted leafy vegetable.
So Beanies, if you cannot travel to Liuzho (500 KM northwest of Guanzhou) where Luosifan is known for, you may want to try the instant noodle packs where you may be able to find in your local Asian grocers!

According to one site I read the snail muscles after hours of boiling actually dissolve into the broth so it is actually not usually seen when eating. Could the snail shells shown in the photo really just served as garnish or perhaps for people who request to have some snail meat in the noodle soup? ๐ค
It took me a while to get it.. ha ha.. yes, I too have a snail mucin essence which has done wonders for my skin!
and I tried escargots for the first and last time in France way back in 2001!!
Thanks kimbap for the info! That’s a whole lot of ingredients in it! I could totally imagine why it would have a strong distaste scent. Also, it has chili in it, so yikes I guess it must be really hot that Wei Yi would repulse not only the smell but also the taste of it. LOL
As for me, imma stick to quick and easy instant noodles 😏

Interesting. While I rub their byproduct on my face I do not think I could ever bring myself to eat them.
