First off, different noodles. Tempura shrimp, gyoza / mandoo, and wontons are often tossed into the noodles and dashi along with pink and white kamaboko, chopped scallions, egg, and sliced char siu (Chinese roast pork). You can make a meal out of it. I love udon served this way, too.
