So,…Wash your citrus thoroughly, slice dried fruit thinly. I used cara cara oranges, cut in half, then sliced thinly. Layer in a sterilized jar with honey and juice. Top with sugar, seal and keep in refrigerator. Give 24-48 hours before using.
You can use a simple syrup rather than honey and juice. Boil 1 cup water with 1/2 cup sugar and use in place of.
You can also use spices. Cinnamon, star anise, allspice, cloves and ginger are all possibilities.
I have boxes of mandarin oranges for Chinese New Year and i think i can try making mandarin syrup with your recipe.. it will be nice to drink ice tea citrus in hot days like this.. and since its saturday and i have all day to myself im planning to make the kaya too – a neighbour gave me several old coconuts and one is enough to produce pure coconut milk for a jar of kaya.
