As a kid I couldn’t wait to be an ‘adult’ so I could choose to live off lollies & pizza – no ‘yucky’ vegetables. Little me would be disappointed that I’m adult who actively craves & dreams of greens 🥬

    It is funny how our tastes change, I used to love almond milk hot chocolate from one of the brand coffee shops but wanted to save time and money and be healthy so started making a home made version with pure almond milk and a fraction of the sugar. I didn’t like the taste initially but when I ‘treated’ myself to the original it tasted off so thought they must have given me the cows milk version by mistake. Three months later I tried it again but it tasted the same and that’s when I realised I was tasting all the additives they add to barista versions of the alternative milk to stop it curdling. 🤢 I will keep saving while I wait for a quality cheaper version of a nut milk machine so I can make my own without the faff.

      It is really funny how tastes change – so many things that I thought I’d never enjoy eating/drinking a few years ago, are now all things that I actively enjoy or don’t taste as bad as I thought they did. And also I didn’t even know they add additives to barista versions of alt. milk but it makes sense – as in I get why they would – but the taste would be so incredibly different when you’re making it home, fresh & natural. I starting to and trying to be more aware of exactly what’s in my food and drink too – it’s really interesting reading the ingredients list of processed/pre-packaged foods and being like wow there’s a lot more in here than I thought and also what even are some of these ingredients (usually the additives and preservatives etc). I’d never thought about drinks purchased from a cafe though, but I’m so curious now – I want to also try making my usual orders at home and seeing what the difference is!

        You will be so surprised by the difference in taste. I look forward to hearing how you get on.

        I made almond milk at home a couple of times and it was 25% almonds compared to 1-3% in shop bought almond milk. I bake my own gluten free biscuits without the gums and ridiculous amounts of sugar they add to make up for the different flour mix needed.
        I have a bought cook books that go into detail on the flavour combinations to help to bring out the best in your dishes. The vegetarian flavour bible and the homemade vegan pantry are really helpful so I can make my own spice mixes and sauces without all the fillers they add to keep it fresh on the shelves for years and I can add or eliminate any flavours I don’t like.
