I wanted to make kimchi, so far didn’t have time, made only fermented cabbage 10 liters but there was an asian shop, actually 2 next to each other, in Cork in Ireland, so I bought there everything I needed, but now is gone, I was so disappointed, because here in Brittany there’s non.
I just mentioned Kimchi on another post, but I eat eat almost everyday now. The one I eat is very mild and no shrimp so not sure how I’d do with other kimchi.
Anyway, this looks good. What are the side dishes?
I always have a batch of pickled radish in my refrigerator, usually have some sort of cucumber side dish, and whenever I can find bean sprouts (which are shocking difficult to find here because the grocery stores are afraid of salmonella and listeria) I make them with sesame oil and garlic. Korean side dishes are lovely.
Feel free to share your kimchi, I haven’t tried making it yet.

yeah the bean sprouts came with a huge ‘MUST NOT BE EATEN RAW’ warning label.

The farmer’s markets will be opening soon, and the lovely Asian farmers will sell their sprouts by the bagful.
