May I introduce to you, what I think should be a staple dessert in any party!
Torta chilena: flaky, crispy layers filled with dulce de leche (if you haven’t tried dulce de leche, go look for some!)
Ahhh, that sucks!! You need some special molds for it (not really special, just thin tin circles) BUT you can try making Mil Hojas which is made with puff pastry instead of the flaky dough of the torta!
I’ve been working on a vegan version for *ages* now, but I’m a pain in the butt when it comes to veganizing stuff and won’t be happy until it tastes either the same or really close to the original thing so no luck yet. I’ll make sure to let you know if I succeed~!
That would be heavenly. I’m the same when dairy-freeing something. It’s gotta be good, like legitimately “would I still like this even if I could eat the real thing?” good, or I don’t want to bother.
Let me know when you figure out the vegan version ~ have you tried making your own sweet condensed milk using soy milk? It’s worked well for me as a substitute in baking, but I’ve never made my own dulce de leche dairy or otherwise so I’m not sure how it would work…

I did a Yelp search and can’t find any torta chilena in the entire Chicago area 😱 I might have to try and make it myself!

Most of the time I’m not bitter about the dairy allergy, but then I learn of foods like this one and have words with my immune system.
